Happy New Year fellow bakers! I hope you got to spend time with your families this holiday season. I have been baking a ton during this holiday season for friends, family, and co-workers. I have been putting new recipes together to share with all of you. I also took a little time for myself during this holiday season – which I think is most important and also why it has been a bit quiet. It is a new year and I am excited to jump back into to sharing yummy recipes with all of you!
Some of the things I have been baking include cranberry orange shortbread cookies, chocolate sandwich cookie snowman truffles, gingerbread cookies, an old oat cookie recipe that I nailed (a passed down recipe I tried to make for the first time), a lot of sugar cookies, and brownie cookies. There were a couple of favorites this holiday season which were the oat cookies with a buttercream frosting and the brownie cookies. I personally really enjoyed both as well. This week I am sharing the brownie cookie recipe.
I had to tell my husband not to eat all of them! They came out so delicious and I played with some different variations because why not?! I love chocolate and brownies, but for some reason I don’t love chocolate cookies or chocolate cake that much. I know, I’m weird. I have a chocolate sugar cookie that I shared back around Halloween time, but I personally still prefer a regular sugar cookie. I was pleasantly surprised when I finally achieved that brownie flavor in cookie form. This cookie was the first one gone off my holiday treat board that I brought into work. It is not difficult to make and everyone you share them with will be coming back wanting more.
As always, you can make these your own by trying new add in’s or toppings. When I made them the first time, the variations I made were plain, some ones that I melted some marshmallows on top of, and my personal favorite, some with walnuts. These are the perfect addition to any sweet treat spread and can be made festive for any occasion with colorful sprinkles or a buttercream frosting.

Walnut Brownie Cookies
Ingredients
- 6 tbsp Salted butter
- ½ cup Granulated sugar
- ¼ cup Brown sugar
- 2 Eggs
- 1 ½ tsp Vanilla extract
- 1 cup Dark chocolate chips
- ¾ cup AP flour
- ¼ cup Cocoa powder
- ½ tsp Baking powder
- ⅛ tsp Sea salt
- 1 ½ cup Walnuts
Instructions
- Preheat your oven to 350°F.
- Line baking sheets with parchment paper. Set aside.
- In a double boiler (a glass bowl over a sauce pan of boiling water) or in a microwave- safe bowl, add your chocolate chips and butter.
- Heat over medium heat until melted together, stir frequently. If using the microwave, heat in 30 second intervals. Set aside to cool.
- In a large mixing bowl, combine eggs, brown sugar and granulated sugar.
- Using a mixer, whip the eggs and sugars together for about 3 minutes on a medium-high speed.
- Turn our mixer to low, add in your slightly cooled chocolate and butter mixture.
- Add in the vanilla extract.
- Once those are well combined, add in your flour, cocoa powder, baking powder and salt.
- By hand using a spatula, fold in your walnuts.
- Using a medium cookie scoop, scoop out batter on to the parchment lined baking sheet. Leave a bit of room in between each drop so that they don't spread into each other. I typically fit about 6 cookies on 1 sheet.
- Bake for about 12 – 14 minutes. Let them cool on the baking sheet for about 10 minutes before moving them to a cooling rack.
