The Best Quick & Easy Key Lime Pie Rice Crispy Bars

Quick and easy?! Count me in. I personally love dessert recipes that are easy to make and packed full of flavor. I do have a soft spot in my heart for decorated sugar cookies, which can take quite a bit of time to decorate. This past week I was having all the fun decorating some Halloween sugar cookies. I often make sugar cookies to practice my royal icing decorating, hoping one day I can be so good that it doesn’t take much time at all. This week I wanted a dessert that was easy to make, but fun and different.

This week’s recipe is a Key Lime Pie Rice Crispy Bar. Super easy to make and the lime is a fun punch of flavor. I had a lot of fun making these ones for Halloween and I’ve decided I am going to create more rice crispy recipes (coming soon). They are sooo yummy and light. Some times desserts can be too sweet, but I feel these rice crispy bars are the perfect balance. 

I just happen to be making these the week of Halloween so spiced them up with green food coloring and sugar eye candies. You can certainly add your own flare with a different color or even some sprinkles mixed in. Normally these would just be the color of marshmallows with hints of green from the zest of the limes.

These super easy to make treats are so easy you don’t even need to turn the oven on. All you need is a large/deep pot. I used a pretty large pasta or soup pot. I will link one below so you have an idea. You start off by prepping your ingredients. Zest 1 1/2 of the limes. Set those aside to be used later. Be sure to roll the limes on the counter to loosen up the juices. Next, I crushed up some graham crackers. I just used a reusable gallon baggie and a rolling pin to crush them up. Now you are ready to start melting the butter. On the stove top, place your pot over medium-low heat and add in your butter. Once the butter is melted, turn the heat down to low and add in the marshmallows, lime zest and lime juice. Stir often until all the marshmallows are melted. Remove from the heat, add in your rice crispy cereal, white chocolate chips and graham cracker crumbs. It’s as easy as that. Press that into your pan and put it in the fridge for at least 30 minutes and ta da- you are done!

Key Lime Pie Rice Crispy Sweets

  • 1 Large (deep) pot

Ingredients
  

  • 2 Key limes (or limes) , zest from 2 limes and juice from 1 1/2 limes
  • 5 cups Rice crispy cereal
  • 1 10 oz Bag of mini marshmallows
  • 4 tbsp Salted butter
  • 1 cup Crushed graham crackers
  • 1 cup White Chocolate Chips
  • Food coloring , optional

Instructions
 

  • Lightly coat a 13 x 9 inch pan with cooking spray. I used baking spray. (see link below)
  • First, roll your limes on a hard surface, applying a bit of pressure to loosen the lime juice.
  • Zest the limes and set aside.
  • Crush some graham crackers in a baggie. I used about 3/4 of a single package of crackers. Placed them into a reusable zipper baggie and crushed them with a rolling pin. Set aside.
  • Melt your butter in your large pan over medium- low heat.
  • Once melted, add in your marshmallows, lime zest and juice from 3 halves of lime (or one and a half limes). Turn the heat down to low and cook until marshmallows are melted. Stir often.
  • Remove from heat and stir in the rice cereal, crushed graham cracker and chocolate chips. Mix until thoroughly combined.
  • *Optional – add your food coloring in here and mix until color has fully coated everything.
  • Press evenly into your prepared 13 x 9 dish.
  • Place in refrigerator for 30 minutes. Once cooled, cut into squares or use a cookie cutter to cut into shapes.

Notes

If you want to cut your crispy sweets into shapes using cookie cutters, I recommend using a thinner treat. To do this, you would want to press them into a small cookie sheet or a larger casserole dish so that they have more room to spread out. Also, spray your cookie cutter with the baking spray when cutting so it won’t stick.
